But he did not want to take the head out of the bramble flower from which he eats the pollen

This insect is quite widespread near my home, in France, in the Massif Central. I am lucky to live in a region preserved from intensive agriculture ...

No, it's not a bee, it's a beetle (coleoptera). Quite common in France
