Those are amazing! what sort of setup do you need for photos like this, would any camera work or does it need to be a higher end one?

I have a Nikon D5600, not "higher end".
I think you can do it with any camera capable of full manual control. You need a flash and a lens with some macro capability.
You can start with that, taking a lot of photos until you hit one collision.
However, it gets MUCH easier if you have some kind of "drop generator", you can buy one or build one yourself if you like DIY projects and have some electrical/electronic skills. I built my own.
